Grenache (60%) Morvedre & Syrah. Cool fermented in large open top wooden fermenters with wild yeast for 20 days. No maceration just gentle pigeage and hand plunging. Pressed off with pressings included, settled then transferred into 500L 2 year old French Oak puncheons for 11 months.
El Matador, being the slayer of the bull, is a powerful character with sanguine characteristics. The wine mirrors the muse, with great power, sublime structure and savouriness. Dark plum, sun dried prunes and black olives with hints of raspberry and dried rose petal. It has a ferrous aspect with a dense powerful core, gentle tannins and very long finish.
A vibrant wine where a riot of orchard aromatics are the prelude for a floral palate of white nectarine, overlaying a delicate creaminess. Beautiful drinking.
Fiano is a variety originally from the Southern Italian region of Campania, and is perfectly suited to our changing climate. From a low yielding, cool year like 2023, Fiano creates a wine with personality. It interlaces complex aroma and honeyed golden flavours within a voluptuous but racy palate.
From a cooler year that produced beautiful quality Shiraz. This wine is a pure expression of the rich fruit and spicy aromatics of Australian shiraz as well as the development of the savouriness and texture reminiscent of Syrah. A truly delicious wine.
