"From a tiny, 0.1ha savagnin vineyard in Waurn Ponds which was originally thought to be albariño. Mainly from '13 and kept under flor for seven years. A very bright gold with green tinges. Ray's homage to Vin Jaune from the Jura and a delicious one at that. Dry, textured, gently oxidative and nutty, finishing saline and long. The Story: The Savagnin grapes grow in rows. We picked them. We crushed them. We waited. The flor came. We let it stay. It was our intention. Science is simple when you respect it. Art is more elusive. We use both. This is what we do at Lethbridge. We make wine. We wait. We trust the process. A bottle holds more than wine. This one captures seven years. It tells our story. Ray

Made predominantly from Geelong grown Savagnin, the grapes were whole bunch pressed and fermented in barrel. After the initial fermentation took place, we let the barrels ullage allowing a natural flor yeast to grow on top of the wine. Over the course of 7 years this flor consumed the alcohol & nutrients in the wine creating nutty, lemon zest flavours. All the while the oxidative ageing created flavours of walnut, almond and mushroom.  Mainly from vintages '13, '14 and '15, blended together to balance the youthful zest and aged nutty characters, this is a delicious drop best enjoyed with an aged hard cheese or comté souffle.
