2025 Menage a Noir Pinot Noir
The fruit for this wine was hand harvested in lots of small batches. Wild yeast fermentation took place in multiple small open fermenters, with 30% whole bunch and a high portion of whole berries. Fermentation was very long and slow with minimal handling, retaining the delicate aromatics while extracting good tannin and colour. The wine was matured for 8 months in a mixure of mostly old and a splash of new french oak.
