The Story:
“This wine has a beautiful power from the black clay and the typical flavour profile is dominated by rich dark cherry, but always retaining good acidity. The black clay gives it a great, dark brooding character.” Ray
Winemaking Description:
Wild yeast fermented with around 40% whole bunches. The wine was then matured for 10 months in 40% new French oak barriques.
