When it should be drunk is up to you, probably not long after it comes into your possession.

"Pinot gris, fiano, riesling, chardonnay and pinot noir – a white wine. Hangs out in a foudre to bottling.
Has this really nice bitterness thing going on. Cucumber in tonic water, saline acidity. Tangy and fresh, a sense of complexity and has compelling texture. It’s a wine that has you pausing to check the corners of your mouth and reset your brain a bit with each sip. I really like it. Fresh in feel and composition."
