The base of the 2020 B5B White is Fiano; we split this into two parts and fermented separately. The first part was destemmed, gently pressed and fermented in foudre, the second was fermented on skins for 10-18 days. While the wine was naturally fermenting in the foudre we introduced Pinot Gris, Riesling, Chardonnay & Pinot Noir juice at different stages as a way of increasing texture and complexity while maintaining fruit vibrancy.
